Great Western Malting's White Wheat Malt is a premium base malt crafted from soft white wheat grown exclusively in the Pacific Northwest. It's fully malted and kilned to develop a soft, balanced sweetness, high extract potential, and a light bready flavor, making it an excellent choice for a variety of wheat beer styles. White Wheat Malt by Great Western Malting is also well-suited for distilling applications, particularly in the production of grain-based spirits such as whiskey or wheat vodka.

  • High Extract Yield (~86%) - This makes it efficient for sugar conversion, providing more fermentable material per pound of malt—key for maximizing alcohol yield in distilling.
  • Diastatic Power (135° Lintner) - Offers sufficient enzymatic strength to convert starches, making it viable both on its own or when combined with adjuncts like unmalted grains. While not as high as some distillers malt, it’s strong enough to aid in full conversion in grain bills with moderate adjunct use.
  • Protein Content (~11.5%) - Moderate protein contributes to flavor development and some mouthfeel, which is desirable in whiskey-style spirits but may require careful mashing to avoid haze or excessive foaming during distillation.
