Sodium Bicarbonate - NaHCO₃ - is used in brewing water adjustment to raise mash pH and increase sodium and bicarbonate levels. It is especially useful when brewing darker, more acidic grain bills containing roasted or highly kilned malts. When used carefully, sodium can also enhance fullness, malt character, and the perception of a softer mouthfeel.
